  • 1 1/4 cups all-purpose Flour

  • 1 stick Butter frozen, grated
  • 3 tablespoons Ice cold water
  • 8 apricots or peaches cut in half and seed removed
  • 1 cup sugar
  • 1 cup pistachios crushed

Method
 

  1. Preheat the oven to 420 degrees Fahrenheit. This ensures that your pie bakes evenly and develops a beautiful golden crust.
  2. In a large bowl, combine the flour, sugar, and salt to create the base for your pie crust. Mix these dry ingredients well to ensure even distribution.
  3. Add the grated butter into the flour mixture. Use a fork to fluff up the mixture, incorporating the butter without completely blending it in. You want small chunks of butter for a flaky texture.
  4. Now, gradually add the ice-cold water, a tablespoon at a time, fluffing with the fork. This helps bring the dough together while keeping it light.
  5. Once the dough starts to come together, gather it with your hands and wrap it in plastic wrap. Chill it in the freezer for 30 minutes or in the fridge for at least an hour. This step is crucial for achieving a flaky crust.
  6. After chilling, remove the dough from the fridge. On a floured surface, roll it out. Cut out circles about five inches in diameter, adjusting the size based on your fruit.
  7. Sprinkle some crushed pistachios over each dough circle and press them down slightly. This will add a wonderful nutty flavor to each bite.
