- In a large mixing bowl, combine the whole kernel corn, Mexicorn, red bell pepper, green bell pepper, red onion, and cheddar cheese. Stir gently to combine.
- Add the mayonnaise, lime juice, and white vinegar. Mix well to ensure everything is coated.
- Cover and refrigerate until ready to serve, ideally at least one hour.
- Just before serving, stir in the crushed Fritos to maintain their crunch.
