Ingredients
  

  • 2 cans whole kernel corn drained
  • 1 can Mexicorn drained
  • ½ unit red bell pepper diced
  • ½ unit green bell pepper diced
  • 1 unit red onion diced
  • 2 cups shredded cheddar cheese
  • 1 cup mayonnaise
  • 2 teaspoons lime juice
  • 1 tablespoon white vinegar
  • 1 bag Chili Cheese Fritos crushed

Method
 

  1. In a large mixing bowl, combine the whole kernel corn, Mexicorn, red bell pepper, green bell pepper, red onion, and cheddar cheese. Stir gently to combine.
  2. Add the mayonnaise, lime juice, and white vinegar. Mix well to ensure everything is coated.
  3. Cover and refrigerate until ready to serve, ideally at least one hour.
  4. Just before serving, stir in the crushed Fritos to maintain their crunch.
