Ingredients
  

  • 2 cups all-purpose flour
  • 2 to 4 tablespoons all-purpose flour for work surface and hands
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • pinch salt optional and to taste
  • ½ cup unsalted butter cold (1 stick)
  • 1 large egg
  • ½ cup sour cream lite is okay
  • 1 teaspoon vanilla
  • 1 heaping cup mixed berries frozen or fresh
  • 1 tablespoon lemon or orange zest optional
  • 1 cup confectioners’ sugar
  • 1 tablespoon cream or milk or substitute with orange or lemon juice
  • 1 tablespoon turbinado sugar optional for sprinkling

Method
 

  1. Preheat your oven to 400F. Line a baking sheet with a Silpat or parchment paper and set it aside for later use.
  2. In a large bowl, add 2 cups of flour, ½ cup of granulated sugar, 1 tablespoon of baking powder, and a pinch of salt (if using). Whisk everything together to combine.
  3. Next, add the cold butter to the dry ingredients. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles large marbles. You can also smoosh some of it with your fingers; this will create a nice, flaky texture.
  4. In a separate small bowl, crack in the egg, add the sour cream, and vanilla. Whisk until smooth and creamy.
  5. Pour the wet mixture over the dry ingredients and gently fold it together using a spatula until just combined. Be careful not to overmix; the dough should be wet and shaggy.
  6. Now, fold in the mixed berries and optional zest. The berries will add a burst of flavor, so make sure they’re evenly distributed.
  7. Sprinkle about 2 tablespoons of flour over a clean work surface and lightly coat your hands. Turn the dough out onto the surface and gently knead it into an 8-inch round. If it’s too wet, sprinkle with flour a tablespoon at a time.
  8. Using a large knife, slice the round into 8 equal-sized wedges. Space them apart on the prepared baking sheet to allow for puffing while baking.
  9. Optionally, sprinkle each wedge with a generous pinch of turbinado sugar for extra sweetness and crunch.
  10. Bake the scones in the preheated oven for about 18 minutes, or until they are lightly golden and cooked through. Check them closely after 15 minutes to ensure they don't become too browned.
  11. Once baked, allow them to cool on the baking tray for about 5 minutes before transferring to a wire rack. While they cool, prepare the glaze.
  12. In a small bowl, combine the confectioners’ sugar and cream (or citrus juice) until smooth. Adjust consistency with more cream or sugar as needed.

Notes

Scones are best fresh, but will keep airtight at room temperature for up to 4 days. If you're not comfortable storing glazed items, glaze only the scones you plan to consume immediately.
