Ingredients
  

  • 2 pounds chicken wings about a dozen
  • Sea salt to taste
  • 1/4 cup plant-based butter melted
  • 1/4 cup hot sauce I like Frank’s Red Hot, which is low FODMAP
  • 2 green scallions thinly sliced on the bias, for garnish (optional)
  • Carrots and celery sticks for serving (optional)
  • Gluten-Free Ranch Dressing for serving (optional)

Method
 

  1. Preheat your oven to 400 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Arrange the chicken wings in an even layer on the baking sheet.
  4. Season generously with sea salt and pepper.
  5. Roast the wings in the oven for 30 minutes.
  6. After 30 minutes, remove the pan and flip the gluten-free chicken wings.
  7. Return the wings to the oven for another 15 minutes.
  8. While the wings are baking, prepare your dairy-free buffalo sauce.
  9. In a medium microwave-safe bowl, melt the dairy-free butter.
  10. Add the hot sauce to the melted butter and stir to combine.
  11. Once the gluten-free buffalo wings are done baking, let them stand for 5 minutes.
  12. Transfer the wings to the bowl with the buffalo sauce using tongs.
  13. Toss the wings until fully glazed in the sauce.
  14. Serve warm with dairy-free ranch dressing and carrots or celery sticks.
