- In a shallow glass dish (I used my 9x13-inch Pyrex cake pan), mix together olive oil, butter, lemon juice and zest, grainy mustard, basil, garlic, red pepper flakes, and seasoning mix. Stir well until all ingredients are combined, creating a luscious marinade that will coat the shrimp.
- Add the jumbo shrimp to the marinade, stirring gently until each piece is well coated. You’ll love the vibrant colors as the marinade clings to the shrimp, ensuring every bite is packed with flavor.
- Place the dish in the refrigerator and allow the shrimp to marinate for about an hour. This step is crucial as it lets the shrimp absorb the flavors, resulting in a more intense taste.
- While the shrimp is marinating, prepare your grill. Preheat it to a medium-high temperature, ensuring it’s hot enough for a good sear on the shrimp.
- Once the grill is ready, thread the marinated shrimp onto skewers. Be sure to give them some space so they cook evenly, preventing any steaming.

- Grill the skewered shrimp for approximately 2 minutes per side, or until you see them just starting to turn pink. You’ll know they’re done when they’re opaque and firm to the touch, which is a delightful visual cue.
