  • 1 lb grape tomatoes or cherry tomatoes
  • 1.5 tablespoons olive oil
  • 4 cloves garlic peeled
  • 1/8 teaspoon salt
  • 1 tablespoon parsley chopped
  • lemon juice

Method
 

  1. Begin by rinsing the grape tomatoes or cherry tomatoes under cold running water. It’s important to ensure they are clean, as any dirt can affect the taste. Once rinsed, drain the tomatoes well and pat them dry with paper towels. You don’t want excess moisture when grilling, as it can prevent them from getting that beautiful char.
  2. Next, heat a skillet over high heat. As the skillet warms up, drizzle in the olive oil. You’ll know it’s ready when the oil shimmers and ripples in the pan. This is the perfect moment to add the garlic. Sauté it until it turns light brown and fragrant, which typically takes about one to two minutes.
  3. Once the garlic is ready, add the prepared tomatoes to the skillet. You’ll want to cook them uninterrupted for about one to two minutes. During this time, resist the temptation to stir them too much; let them sit so they can develop a nice char on the bottom.
  4. After the first couple of minutes, use a spatula to toss and turn the tomatoes. At this point, you should start to see charred and burnt marks appearing on their surface. This is what you want, as it adds a delicious smoky flavor. Cook the tomatoes for another minute or so, allowing them to blister and soften.
  5. Once they’re cooked to your liking, sprinkle in the salt, add the chopped parsley, and pour in a splash of lemon juice. This combination not only enhances the flavor but also brightens it significantly. Stir everything together gently to combine well.
