Ingredients
  

  • 3 stalks Celery
  • 1 medium Onion
  • 3 medium Carrots
  • 2 medium Russet Potatoes
  • 15 ounces Chickpeas canned
  • 14.5 ounces Diced Tomatoes canned
  • 3 cups Chicken Broth low-sodium
  • 1/4 cup Water
  • 1 cup Green Peas frozen
  • 1 cup Corn frozen
  • 1 cup Long-Grain Rice
  • 1 tablespoon Soy Sauce low sodium
  • 1/4 teaspoon Thyme dried
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Black Pepper ground
  • 4 medium Dinner Rolls wheat

Method
 

  1. Chop celery, onion, carrots, and potatoes; drain and rinse chickpeas.
  2. Add all ingredients to a large pot and heat over high heat. Bring to a boil, then reduce heat and simmer for thirty minutes or until vegetables and rice are tender.
  3. Taste and season with additional spices as desired. Serve with dinner rolls on the side.
