Ingredients

  • 4 pieces boneless skinless chicken breasts about 8 oz each
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp oregano
  • ¼ tsp paprika
  • 1 tbsp olive oil
  • 3 tsp garlic minced
  • 1 cup chicken broth low sodium
  • ¼ cup lemon juice freshly squeezed
  • 3 tbsp capers
  • 1 lb broccolini trimmed
  • 1 lemon lemon cut into wedges for serving
  • ¼ tsp crushed red pepper for garnish

Equipment

  • Frying Pan
  • Wooden Spoon
  • Skillet

Method

  1. Pound the chicken breasts to an even thickness using a meat mallet, rolling pin, or a heavy-bottomed pot.
  2. Season the chicken with salt, black pepper, garlic powder, oregano, and paprika.
  3. Heat a large skillet over medium-high heat and add in the olive oil. Once hot, sear the chicken for 3 to 4 minutes per side, until browned.
  4. Remove the chicken breasts to a plate and keep warm.
  5. In the same skillet, over medium heat, sauté the garlic until fragrant, about 30 seconds.
  6. Stir in the chicken broth, lemon juice, and capers. Use a spatula to scrape any browned bits from the bottom of the pan.
  7. Add the broccolini to the skillet and nestle the chicken breasts in between.
  8. Continue cooking until the broccolini turns a bright green and the chicken reaches an internal temperature of 165 degrees F.
  9. Garnish the chicken with lemon wedges and a dash of crushed red pepper if desired.
  10. Enjoy your Lemon Chicken and Broccolini!

Notes

  • If you can’t locate any broccolini, you can swap it for broccoli florets.
