Ingredients
  

  • 2 hearts Romaine lettuce very thinly sliced into ribbons (about 10 cups)
  • 5 green onions/scallions sliced
  • 1 bunch dill chopped (about 1/4 cup)
  • 4 ounces sheep's feta cheese can substitute cow feta
  • 1/3 cup extra virgin olive oil
  • 1 juice of one large lemon about 3 tablespoons
  • 1/2 teaspoon kosher or sea salt
  • 1/4 teaspoon freshly ground white or black pepper

  1. To start, gather all your ingredients. Make sure your Romaine lettuce is fresh and crisp. The quality of your ingredients is key to a great salad.
  2. Wash the lettuce thoroughly under cold water. After rinsing, I like to use a salad spinner to remove excess water. This helps keep the salad from becoming soggy.
  3. Next, slice the Romaine lettuce into thin ribbons. The thinner, the better, as it allows for a more enjoyable bite!
  4. After the lettuce, it’s time to chop the dill. I love the fresh aroma that fills the kitchen when I chop this herb. It’s a great addition, giving the salad an unmistakable flavor.
  5. Now, prepare the dressing. In a bowl, combine the extra virgin olive oil, lemon juice, salt, and pepper. Use a whisk or fork to blend these ingredients together until they emulsify into a smooth dressing. You can also use a food processor for a quicker method!
  6. In a large mixing bowl, add the sliced lettuce, sliced green onions, chopped dill, and crumbled feta cheese. I like to reserve some feta for garnish later, which adds a beautiful finishing touch.
  7. Pour the dressing over the salad mixture. It’s important to do this right before serving to keep everything fresh. Toss the salad gently using your hands to massage the greens and break down the feta while distributing the dressing evenly.
  8. Once everything is combined, serve immediately. I love to present it in a large, beautiful bowl and sprinkle the reserved feta on top for an extra pop of flavor.
