Method
- In a small bowl, combine olive oil, balsamic, salt, and freshly cracked black pepper. Stir until well blended.
- Marinate the mozzarella cubes in the dressing for about 30 minutes.
- Thread a grape tomato onto the skewer, followed by a basil leaf, and a cube of marinated mozzarella.
- Repeat until the skewer is filled, typically two or three sets of each ingredient.
- Arrange the skewers on a platter and serve immediately.
Notes
Store any leftovers in an airtight container in the fridge for up to two days.
