Ingredients
  

  • 16 skewers bamboo skewers
  • 48 pieces grape tomatoes
  • 48 leaves small basil leaves
  • 1 lb fresh mozzarella cut into 32 1-inch cubes
  • 3 tbsp olive oil
  • 1 tbsp balsamic
  • to taste Salt and Freshly cracked black pepper

Method
 

  1. In a small bowl, combine olive oil, balsamic, salt, and freshly cracked black pepper. Stir until well blended.
  2. Marinate the mozzarella cubes in the dressing for about 30 minutes.
  3. Thread a grape tomato onto the skewer, followed by a basil leaf, and a cube of marinated mozzarella.
  4. Repeat until the skewer is filled, typically two or three sets of each ingredient.
  5. Arrange the skewers on a platter and serve immediately.

Notes

Store any leftovers in an airtight container in the fridge for up to two days.
