Ingredients
  

  • 1/3 cup unsweetened shredded coconut toasted
  • 1/4 cup ground flaxseed
  • 1/2 cup raw sunflower seeds
  • 1/3 cup sunbutter homemade or store-bought
  • 1/2 tsp vanilla
  • 1 tsp chia seeds
  • 1 tbsp maple syrup or honey
  • 1/2 cup mix of dried cranberries golden raisins, and dark chocolate chips

Method
 

  1. Start by gathering all your ingredients. Make sure your sunbutter is smooth and not too thick. You want it to blend well with the other ingredients.
  2. In a mixing bowl, combine the shredded coconut, ground flaxseed, and sunflower seeds. Mix them together well to get an even distribution.
  3. Add in the sunbutter and stir until everything is well combined. The mixture should start to clump together nicely.
  4. Next, incorporate the chia seeds, vanilla, and your sweetener of choice, either maple syrup or honey. Stir until thoroughly mixed.
  5. Now it’s time to fold in your dried fruits and chocolate chips. This is where the fun begins! You can customize the mix to your liking, so feel free to add more or less depending on your taste.
  6. Once everything is well combined, use your hands to scoop out portions of the mixture. Roll them into small balls. I like to make mine about the size of a tablespoon.
  7. Place the rolled balls onto a baking sheet lined with parchment paper. Make sure they are spaced apart to allow for easy handling later.
  8. Once you’ve rolled all the mixture, pop the baking sheet into the refrigerator. Let them chill for at least thirty minutes. This helps them firm up and hold their shape.
  9. After chilling, remove the energy balls from the fridge. If you want to perfect their shape, you can roll them again at this stage.
  10. Finally, enjoy your Nut Free Energy Balls! You can store any leftovers in an airtight container in the refrigerator or freeze them for later.

Notes

  • Ensure your sunbutter: Make sure your sun-butter (or any nut-butter used!) is fresh and not thick or dry. Thick or dry nut butters will result in an energy ball that won’t hold together well.
  • Storage tips: Store in the refrigerator for 1-2 weeks, or freeze for up to 3 months.
