Preheat your oven to 350 degrees F. Line a cookie sheet with parchment paper.
In the bowl of a food processor, combine the almond butter, coconut sugar, and coconut oil. Process for about 1 minute until everything comes together into a smooth mixture.
Next, add the eggs to the mixture and process again. The dough may seize up, but don’t worry.
Add the coconut flour, baking soda, and salt. Process until a thick dough forms.
Gently fold in the dairy-free dark chocolate chips using a spatula.
Using a cookie scoop, drop balls of dough onto the prepared cookie sheet.
Place the cookie sheet in the oven and bake for 8 to 10 minutes.
Once baked, allow the cookies to cool on the sheet for at least 5 minutes before transferring to a wire rack.
Repeat the process with any remaining dough, and enjoy your cookies!
