Ingredients
  

  • 3/4 cup unsalted creamy almond butter
  • 1/2 cup organic coconut sugar
  • 2 tablespoons coconut oil, melted and cooled
  • 2 eggs
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup dairy-free dark chocolate chips

Method
 

  1. Preheat your oven to 350 degrees F. Line a cookie sheet with parchment paper.
  2. In the bowl of a food processor, combine the almond butter, coconut sugar, and coconut oil. Process for about 1 minute until everything comes together into a smooth mixture.
  3. Next, add the eggs to the mixture and process again. The dough may seize up, but don’t worry.
  4. Add the coconut flour, baking soda, and salt. Process until a thick dough forms.
  5. Gently fold in the dairy-free dark chocolate chips using a spatula.
  6. Using a cookie scoop, drop balls of dough onto the prepared cookie sheet.
  7. Place the cookie sheet in the oven and bake for 8 to 10 minutes.
  8. Once baked, allow the cookies to cool on the sheet for at least 5 minutes before transferring to a wire rack.
  9. Repeat the process with any remaining dough, and enjoy your cookies!
