Ingredients
  

  • 1 pound Asparagus about 20 spears, tough ends snapped off
  • 2/3 cup Seasoned Panko Crumbs or gluten-free seasoned panko
  • 2/3 cup Shredded Parmesan Cheese or dairy-free Parmesan
  • 2 tablespoons All-Purpose Flour or gluten-free flour
  • 2 large Eggs beaten
  • to taste Olive Oil Spray

Method
 

  1. Combine the seasoned panko crumbs and Parmesan cheese in a large shallow bowl.
  2. Place the eggs and flour in another shallow bowl and whisk well.
  3. Dip the asparagus in the egg mixture, then the panko-parmesan and spray generously with olive oil.
  4. Place in the air fryer basket in an even layer and air fry at 380°F for 6 to 7 minutes, flipping halfway until golden and tender.
  5. To bake, preheat the oven to 425°F.
  6. Spray a sheet pan with oil and place the breaded asparagus on the sheet pan.
  7. Spray with oil and bake for 12 to 14 minutes, turning halfway, until golden and tender.
