Ingredients

  • ½ cup All-purpose flour
  • 2 large Eggs
  • 1 cup Plain panko bread crumbs
  • 1 teaspoon Garlic powder
  • ½ cup Grated parmesan cheese
  • ½ teaspoon Dried parsley
  • ½ teaspoon Dried oregano
  • ¼ teaspoon Ground black pepper
  • ½ cup Plain Greek yogurt
  • 1 teaspoon Dried dill
  • ½ teaspoon Minced garlic
  • 3 tablespoons Olive oil
  • 2 tablespoons Grated parmesan

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit. This high temperature will ensure that the fries get crispy and golden. Get your baking sheet ready by lightly spraying it with nonstick cooking spray or lining it with parchment paper.
  2. Take your fresh asparagus, about 1 pound, and trim the bottoms off to remove any tough ends. You want the tender part of the asparagus to be the star of this dish.
  3. Set up a breading station with three shallow dishes. In the first dish, add ½ cup of all-purpose flour. This will help the egg adhere to the asparagus.
  4. In the second dish, beat together 2 large eggs. This egg wash will give the fries a beautiful golden color and help the crumbs stick.
  5. In the third dish, combine 1 cup of plain panko bread crumbs, 1 teaspoon of garlic powder, ½ cup of grated parmesan cheese, ½ teaspoon of dried parsley, ½ teaspoon of dried oregano, and ¼ teaspoon of ground black pepper. Mix well until everything is evenly combined.
  6. Take each piece of asparagus and first dredge it in the flour, shaking off any excess. Then, dip it into the egg wash, allowing any extra to drip off. Finally, coat it thoroughly in the panko mixture. Make sure each piece is well covered to achieve that crispy texture.
  7. Once all the asparagus is coated, arrange them in a single layer on your prepared baking sheet. It’s important not to overcrowd the pan, as this will help them crisp up nicely.
  8. Bake in the preheated oven for 10 to 12 minutes or until they are lightly browned on top and the edges are crispy. Keep an eye on them to avoid overcooking.
  9. While the fries are baking, prepare the dipping sauce. In a food processor or blender, combine ½ cup of plain Greek yogurt, 1 teaspoon of dried dill, ½ teaspoon of minced garlic, 3 tablespoons of olive oil, and 2 tablespoons of grated parmesan. Pulse until smooth and creamy.
  10. Season the dipping sauce with salt and ground black pepper to taste. Adjust the flavors according to your preference.
  11. Once the asparagus fries are out of the oven and crispy, serve them hot with the creamy dipping sauce on the side. Enjoy the delightful crunch and herby flavor!
