Ingredients
  

  • 8 tablespoons Butter melted
  • 1/2 cup Sugar
  • 1 1/2 cups Graham Cracker Crumbs
  • 1 cup Cream Cheese
  • 1/2 cup Peanut Butter
  • 1 Egg
  • 1 cup Powdered Sugar
  • 1/2 cup Cream
  • 1/2 cup Peanut Butter Chips

Method
 

  1. Line an 8 x 8-inch pan with nonstick foil. Preheat oven to 350ยบ.
  2. In a medium bowl, mix the melted butter, sugar, and graham cracker crumbs. Press into the bottom of the prepared pan. Bake for 9 minutes, then remove from oven and let cool. Leave oven on.
  3. When the crust is cool, cover the bottom with peanut butter cups.
  4. To make the cheesecake layer, mix cream cheese, sugar, egg, and peanut butter with an electric mixer. Carefully spread over peanut butter cups.
  5. Bake for 30 minutes. Let cool completely.
  6. To make the ganache, microwave the cream and butter until the butter is melted. Whisk in peanut butter chips until smooth. Mix in powdered sugar and pour over bars.
  7. Chill firm before cutting. Cut into 16 squares. Drizzle with melted chocolate chips if desired.
  8. Store in refrigerator.
