Ingredients
  

  • 9 lasagna noodles
  • 1 jar marinara sauce
  • 1 container ricotta cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • salt and pepper
  • 2 1/2 cups shredded mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1 package pepperoni slices
  • fresh basil

Method
 

  1. Preheat your oven to 350 degrees and spray a 9×13-inch baking dish with cooking spray. This prevents sticking and keeps your roll-ups intact.
  2. Next, cook the lasagna noodles according to package directions in well-salted water. Once cooked, drain them and spread them out on a cutting board or parchment paper to keep them from sticking together.
  3. In a medium bowl, combine the ricotta cheese, garlic powder, onion powder, Italian seasoning, and red pepper flakes. Add salt and pepper to taste. This filling is the cornerstone of your roll-ups, adding creaminess and flavor.
  4. Now, stir in 1 1/2 cups of shredded mozzarella cheese into the ricotta mixture. This will enhance that gooey texture everyone loves.
  5. Take each noodle and spread an even layer of the ricotta mixture on top, making sure to divide it evenly. Don't forget to leave some space at the edges!
  6. Arrange about 7 slices of pepperoni along the length of each noodle. Feel free to add more if you like it extra meaty!
  7. In your prepared baking dish, spread about 1/2 cup of marinara sauce on the bottom to keep the roll-ups moist during baking.
  8. Carefully roll each noodle up, placing them seam side down in the baking dish. This helps keep everything inside during baking.
  9. Pour the remaining marinara sauce over the top of the roll-ups, making sure they are well covered. This adds flavor and moisture.
  10. Sprinkle the top with Parmesan cheese and the remaining mozzarella cheese. This will create a beautifully melty and slightly golden crust.
  11. To avoid sticking, spray the underside of a piece of foil with cooking spray and place it greased side down over the baking dish. This keeps the cheese from adhering to the foil.
  12. Bake in the preheated oven for 25 minutes. If you prefer a golden-brown finish, turn on the broiler for a few minutes at the end of baking but keep an eye on it!
  13. Top with fresh basil just before serving to add a pop of color and freshness.
