Ingredients
  

  • 4 russet potatoes washed and fork holes poked in each end
  • 1/2 cup pizza sauce or marinara sauce
  • 1 cup mozzarella cheese
  • 1 Optional toppings: mini pepperonis, olives, peppers, mushrooms, basil, cooked sausage, etc.

Method
 

  1. Bake the russet potatoes at 400°F for one hour. You'll know they're done when the skin is crispy and a fork can easily pierce through.
  2. Once baked, remove the potatoes from the oven. Be careful as they'll be hot! Cut them down the center and gently mash the insides with a fork to create a fluffy base.
  3. Now comes the exciting part! Divide the pizza sauce evenly among each potato, making sure every bite will be flavorful.
  4. Sprinkle the mozzarella cheese generously on top of the sauce, and don't hold back on those optional toppings! Add your choice of mini pepperonis, olives, peppers, mushrooms, or anything else that tickles your fancy.
  5. Once everything is topped, put the potatoes back in the oven for about five minutes. You'll want to watch as the cheese melts beautifully, creating a gooey, delicious topping.
