Ingredients

  • 1 pound asparagus bottom woody stems removed and discarded (about 1 to 1-1/2-inch on bottom)
  • 1 red bell pepper stemmed, seeded, and sliced into strips
  • 1 yellow or orange bell pepper stemmed, seeded, and sliced into strips
  • 1 red onion peeled, halved and cut into slices
  • 2 garlic cloves minced
  • 6 thyme leaves fresh or 2 teaspoons dried thyme
  • 1.5 tablespoons extra virgin olive oil
  • 1/4 teaspoon kosher or sea salt
  • 1/4 teaspoon black pepper

Equipment

  • Chef's Knife
  • Baking Sheet
  • Peeler
  • Oven

Method

  1. Preheat your oven to 425 degrees Fahrenheit. This temperature is perfect for roasting, allowing the vegetables to caramelize beautifully.
  2. In a large bowl, toss the asparagus, bell peppers, onion, garlic, and thyme together. Add in the olive oil, salt, and black pepper, ensuring each piece is well-coated. The oil will help the veggies roast evenly and enhance their flavors.
  3. Spread the vegetable mixture in an even layer on a baking sheet. Make sure there’s enough space between the pieces; crowding can lead to steaming instead of roasting.
  4. Place the baking sheet in the preheated oven and roast for 15 to 20 minutes. Keep an eye on them—when the veggies are tender and lightly brown, they’re done.
  5. Once roasted, remove from the oven and let them cool for a couple of minutes. This brief resting period allows the flavors to meld beautifully.
  6. Serve the Roasted Asparagus Peppers warm, either as a standalone side dish or alongside your choice of protein. Enjoy the crispy, caramelized edges and the burst of flavor in every bite!
