1. Preheat your oven to 400 degrees Fahrenheit.
2. Remove the hard bottoms of the asparagus stems by snapping them off.
3. Peel the remaining hard skin from the bottom of the asparagus stalks.
4. Lay the asparagus on a single layer on a sheet pan.
5. Drizzle with two tablespoons of olive oil and coat evenly.
6. Season with salt and freshly ground black pepper.
7. Pop the sheet pan into the preheated oven and roast for around 10 to 15 minutes.
8. Remove the asparagus from the oven when tender.
9. Transfer to a large platter and drizzle with the remaining olive oil.
10. Sprinkle with parmesan cheese and additional pepper before serving.
