Ingredients

  • 1 pound Zucchini cut into 1/2-inch slices
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Garlic Powder
  • to taste Fresh Herbs for garnish, optional

Equipment

  • Chef's Knife
  • Baking Sheet
  • Oven

Method

  1. Preheat your oven to 425°F and prepare a baking sheet with parchment paper. This helps achieve that perfect roast and makes cleanup a breeze.
  2. In a large bowl, toss the zucchini slices with olive oil, sea salt, black pepper, and garlic powder until every piece is evenly coated. You want to ensure that each slice has a lovely sheen of oil.
  3. Spread the seasoned zucchini in a single layer on the prepared baking sheet. Make sure not to overcrowd the pan; giving them space allows for even roasting.
  4. Place the baking sheet in the oven and roast the zucchini for about 15 minutes. Keep an eye on them; they should become golden and tender. You can stir them midway through for even cooking.
  5. Once done, remove them from the oven. You’ll notice that the edges are beautifully caramelized, and the center is perfectly tender.
  6. Optional: Garnish the roasted zucchini with fresh herbs before serving. This adds a burst of color and freshness to the dish.
