Start by crumbling and browning the breakfast sausage in a large skillet over medium heat.
Pour off all but one tablespoon of the fat.
Add the flour to the skillet, mixing it around to coat the sausage.
Turn the heat back on to medium-high and stir, cooking for two minutes.
Once two minutes pass, add the milk and stir continuously.
When small bubbles form at the edge, reduce heat to medium-low.
Continue stirring until desired thickness is reached.
Taste and season with salt and pepper.
Let it sit for five minutes before serving.
