Ingredients
  

  • 1 tablespoon olive oil
  • ½ pound mild or spicy ground sausage optional
  • 1 yellow onion diced
  • 1 red bell pepper core removed and diced
  • 1 28-ounce can diced tomatoes
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper optional
  • ¼ teaspoon turmeric
  • 1 cup baby spinach
  • 4 eggs
  • Chopped parsley for garnish

Method
 

  1. Heat olive oil in a large non-reactive skillet over medium heat. Once hot, add sausage. Cook until no pink remains and crumbled.
  2. Add in onions and peppers and cook, stirring occasionally, until starting to soften, about 5 to 7 minutes.
  3. Add in diced tomatoes and all spices and stir together.
  4. Bring tomato sauce up to a boil, and then lower the heat. Add in the spinach, and cook until wilted.
  5. Create four small indents into the sauce mixture and crack an egg into each.
  6. Cover the pan and let cook until eggs are cooked as desired.
  7. Garnish with parsley and serve!

Notes

Feel free to skip out on the sausage, to make this vegetarian.
