Ingredients

  • 1 medium ripe banana (frozen)
  • 0.5 cup water
  • 0.25 cup raw cashews
  • 1 cup baby spinach (loosely packed)
  • 0.5 teaspoon pure vanilla extract
  • 6-7 fresh mint leaves can substitute 2-3 drops peppermint extract – just go light on it, a little goes a long way!

Equipment

  • Blender

Method

  1. Start by gathering all your ingredients. It’s helpful to have everything prepped and ready to go.
  2. Take your frozen banana and break it into smaller pieces. This will help it blend more easily in the blender.
  3. In your high-speed blender, add the frozen banana pieces along with 1/2 cup water.
  4. Next, add in 1/4 cup raw cashews. These nuts will provide a creamy consistency to your smoothie.
  5. Now, toss in 1 cup baby spinach. Remember, it won’t change the flavor but will add a ton of nutrients.
  6. Pour in 1/2 teaspoon pure vanilla extract for added depth in flavor.
  7. Finally, add the fresh mint leaves. If you want a stronger mint flavor, feel free to add more.
  8. Secure the lid on your blender and blend everything on high until smooth. You’ll want to make sure there are no chunks remaining.
  9. Once blended, take a moment to check the texture. If it’s too thick, add a little more water and blend again.
  10. Pour your Shamrock Shake Smoothie into a glass and enjoy immediately for the best flavor and texture!

Notes

  • Tip 1: If you have leftovers, store them in an airtight container in the fridge for up to 24 hours, but be aware that the texture may change.
  • Tip 2: You can freeze the smoothie in ice cube trays for a quick, frozen treat later.
  • Tip 3: Feel free to add other fruits like avocados or berries for different flavors and textures.
  • Tip 4: This smoothie pairs well with a light lunch or as a refreshing afternoon pick-me-up.
  • Tip 5: If fresh mint isn’t available, a few drops of peppermint extract can work in a pinch.
