  • ½ cup ketchup
  • 2 teaspoons chili powder

  • 1 teaspoon brown sugar
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 Tbs Worcestershire sauce
  • 1 Tbs fish sauce
  • 1 Tbs cider vinegar

Method
 

  1. Start by heating a large skillet over medium heat and add 2 Tbs vegetable oil to the pan. Give it a moment to warm up; you want it shimmering but not smoking.
  2. Once the oil is hot, add 1 lb ground beef. As it cooks, use your spatula or a potato masher to break the meat into fine pieces. You want it to brown nicely, developing a rich flavor without overcooking it.
  3. When the beef is just beyond pink, it’s time to incorporate the remaining ingredients. Add 4 oz tomato paste, ½ cup ketchup, ⅓ cup broth, and the spices: 2 teaspoons chili powder, ½ teaspoon salt, ½ teaspoon pepper, 1 teaspoon brown sugar, 2 teaspoons onion powder, and 2 teaspoons garlic powder. Stir everything together well to combine.
  4. Next, add 1 Tbs Worcestershire sauce, 1 Tbs fish sauce, and 1 Tbs cider vinegar. These ingredients add layers of flavor that are simply irresistible.
  5. Bring the mixture to a gentle simmer, allowing the flavors to meld together beautifully. If it seems too thick, feel free to add a little more broth to reach your desired consistency.
  6. Let it simmer for about 10 minutes, stirring occasionally. This step helps deepen the flavors and makes the chili even more delicious!
  7. Once ready, taste the chili and adjust the seasoning if necessary. You can add a pinch more salt or a dash more pepper if you prefer.

Notes

  • Tip 1: You will definitely want the ground beef broken up very fine. You CAN do this by continually chopping the meat while it is browning, but that isn’t any fun! Instead, just use a potato masher and give it a couple of whacks with that.
  • Tip 2: Think about if you like for your hot dog chili to have a sweet tang to it? If so, use a little more brown sugar, if not, use less. Remember that the ketchup already has sugar in it and will add some sweetness to the dish.
  • Tip 3: One thing that I never enjoy about canned hot dog chili is that the meat tastes overcooked usually. Instead, only brown it until most of the pink is gone. The meat will finish cooking as you add the other ingredients and won’t over cook that way.
  • Tip 4: Of course, if you prefer to use fresh garlic or onions, that works fine here. The powders work just fine.
  • Tip 5: If the final chili is thicker than you want, add a little extra broth (like ¼ C at a time) to thin it to the desired consistency.
