Ingredients

  • 2 cups cooked quinoa
  • 2 eggs
  • 2 Tbsp green onion, chopped
  • 2 Tbsp fresh mint, chopped
  • 2 Tbsp parsley, chopped
  • 1/2 cup grated cheese I used Gruyere cheese
  • 1/2 cup whole wheat bread crumbs
  • 1/4 tsp sea salt

Equipment

  • Skillet
  • Grater
  • Mixing Bowl
  • Chef's Knife
  • Frying Pan
  • Whisk

Method

  1. Start by cooking your quinoa according to package directions. Rinse it under cold water to remove any bitterness, then simmer until fluffy. This will be the hearty base of your patties.
  2. In a large bowl, crack open the eggs and whisk them lightly. Add in the chopped green onion, mint, parsley, grated cheese, bread crumbs, and sea salt. Mix everything thoroughly until you have a cohesive mixture.
  3. Once the quinoa is ready, let it cool slightly before adding it to the egg mixture. Gently fold it in until combined. This allows all the flavors to meld together.
  4. Heat a large nonstick skillet over medium heat and drizzle a little olive oil in the pan. This will help to achieve that lovely golden-brown crust.
  5. Using your hands, form the mixture into 2-inch patties, ensuring they are tightly packed. This helps them hold together while cooking.
  6. Carefully place the patties into the heated skillet, making sure not to overcrowd the pan. You may need to cook them in batches.
  7. Cook the patties for about 3 minutes on each side or until they are golden brown and crispy on the outside. The aroma filling your kitchen will be irresistible!
  8. Once the patties are cooked, remove them from the skillet and place them on a paper towel to drain any excess oil.
  9. Serve your Spring Herb Quinoa Patties immediately with a side salad or dipping sauce of your choice. Enjoy the burst of flavors!
