Method
- In a food processor or blender, add all of your dressing ingredients. Process until well blended.
- If dressing is chunky, place a sieve over a small bowl and pour dressing into the sieve. With a back of a spoon, push the strawberries through. Be sure to scrape the strawberry drippings from the backside of the sieve. Set aside.
- In a bowl, add all of your salad ingredients, toss with dressing and divide between two plates.
Notes
- Storage: To store leftovers, keep the salad and dressing separate to maintain freshness. Store in airtight containers in the fridge for up to two days.
- Freezing: This salad is best enjoyed fresh. Freezing is not recommended as it may alter the texture of the greens.
- Pairing: This salad pairs wonderfully with grilled chicken or fish for a complete meal.
- Variation: Add nuts like walnuts or pecans for extra crunch and flavor.
