Preheat your oven to 350ºF.
Lightly spray a 9x5x3-inch loaf pan with cooking spray and set it aside.
In a large mixing bowl, combine flour, sugar, baking soda, salt, and cinnamon. Stir everything together until well combined.
Add eggs and vegetable oil to the dry ingredients. Mix everything well until you have a smooth batter.
Stir in the chopped strawberries, being gentle to distribute them throughout the batter without crushing them.
Pour the mixture into the prepared loaf pan and smooth the top with a spatula if necessary.
Place the loaf pan in the preheated oven and bake for 1 hour. Check with a toothpick to ensure it comes out clean.
Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
