Method
 

  1. Start by whisking together the flour, brown sugar, baking powder, ground cinnamon, and salt in a large bowl. Make sure to mix it well so that the baking powder is evenly distributed.
  2. In another bowl, combine the vegetable oil, eggs, milk, and vanilla extract. Whisk these wet ingredients until they’re well blended and slightly frothy.
  3. Pour the wet mixture into the dry ingredients and stir gently. Be careful not to overmix; you want a few lumps to ensure fluffy pancakes.
  4. Preheat your electric griddle to 350°F or heat a skillet over medium heat. Lightly spray with nonstick cooking spray or grease with some butter to prevent sticking.
  5. Ladle the pancake batter onto the griddle, using about a quarter cup for each pancake. Immediately sprinkle about half a teaspoon of graham cracker crumbs on top of each pancake.
  6. Cook until the bottom turns a lovely golden brown and you see bubbles forming on the surface. This should take about 2 to 3 minutes.
  7. Carefully flip the pancakes and cook for another 1 to 2 minutes until they’re fully cooked through. Some of the graham cracker crumbs might spill when you flip, so don’t worry—this is normal!
  8. Once cooked, remove the pancakes from the griddle and keep them warm while you finish the rest of the batter.
