Ingredients
  

  • 4 pitted prunes
  • 1 cup toasted walnuts
  • ½ cup roasted, unsalted macadamia nuts
  • 2 tablespoons melted coconut oil
  • ½ cup diced fresh strawberries
  • ½ cup unsweetened shredded coconut

Method
 

  1. Pulse the pitted prunes in a food processor until they form a uniform paste.
  2. Add the toasted walnuts to the food processor and pulse until they are finely chopped.
  3. Pour the melted coconut oil through the top chute of the food processor while the blade is running. Turn off the food processor as soon as the oil is incorporated.
  4. Scoop the mixture into a large bowl and add the diced fresh strawberries. Gently mix everything together until uniform.
  5. Form the dough into 12 even portions and roll them in your palms until they resemble uniform balls. The balls will be sticky and soft at this point.
  6. Roll the balls in the unsweetened shredded coconut until coated all over.
  7. Chill in the fridge until solidified. You can keep them in a sealed container in the fridge for up to a week.
