- Start by placing ¼ cup whole milk in a small bowl. Sprinkle the 2½ teaspoons unflavored gelatin evenly over the milk. Allow it to soak for about 5 minutes. This step is crucial as it helps the gelatin dissolve properly later on.
- In a small saucepan, combine 2 cups heavy cream, ½ cup granulated white sugar, and the seeds from ½ whole vanilla bean along with the pod itself. Heat the mixture over medium heat until it starts to boil gently, then lower the heat and let it simmer for about 5 minutes. Stir occasionally to ensure the sugar dissolves completely.
- After simmering, remove the pan from the heat. Gradually whisk in the milk and gelatin mixture until smooth. You might notice the mixture becoming creamier as the gelatin combines beautifully with the cream.
- Next, strain the liquid through a mesh strainer into a clean bowl or measuring jug. This step will catch any undissolved gelatin and ensure your panna cotta is perfectly smooth.
- Pour the silky mixture into individual serving glasses or ramekins. Cover them with plastic wrap and set them in the refrigerator to chill for at least 4 hours, or overnight if possible. Patience is key here!
- While the panna cotta sets, let’s prepare the strawberry topping. In a small saucepan, add ½ cup sliced strawberries, 3 tablespoons granulated sugar, 1 tablespoon water, and 1 teaspoon freshly squeezed lemon juice. Heat the mixture over medium heat, stirring occasionally, until it comes to a gentle boil.
- Let the mixture simmer for about 5 minutes until the strawberries soften and release their juices. Remove it from the heat and add in the remaining sliced strawberries.
- Allow the strawberry topping to cool completely. Once cooled, spoon it generously over the chilled panna cotta.
- For the final touch, refrigerate again until you’re ready to serve. The panna cotta will be beautifully set with a luscious strawberry topping waiting to be enjoyed!
Notes
While panna cotta is best enjoyed fresh, you can freeze it for a month. Just make sure to wrap it tightly.
