Ingredients
  

  • 1 tablespoon olive, canola or vegetable oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 pound ground beef or ground turkey
  • 1 small red bell pepper seeded and diced
  • 2 tablespoons taco seasoning
  • 1 teaspoon kosher salt
  • 1/4 cup chopped cilantro
  • 1 16 ounce can black beans drained and rinsed
  • 1 small head romaine lettuce washed and chopped
  • 1 lime juiced
  • 2 small tomatoes diced
  • 1 cup shredded Mexican blend cheese
  • 1 bag corn tortilla chips

Method
 

  1. Heat a large sauté pan over medium high heat, add oil and sauté onions and garlic for 3 minutes.
  2. Add ground beef using a wooden spoon to break up the pieces and cook for 3 minutes.
  3. Add bell pepper, taco seasoning, salt and sauté for 2-3 minutes or until beef is cooked through. Add cilantro and lime juice and set aside.
  4. To assemble, divide the lettuce between individual serving bowls, top with beef mixture, black beans, cheese, chopped tomatoes and chips.
  5. Top with sour cream, salsa, guacamole and/or your favorite hot sauce. Alternatively you can place all of the ingredients in separate bowls for a fun DIY meal!

Notes

  • Tip 1: Leftover taco bowls can be stored in an airtight container in the refrigerator for up to three days. Keep the components separate for the best freshness.
  • Tip 2: While the assembled bowls don’t freeze well, you can freeze the meat mixture for up to three months. Just thaw and reheat when you're ready to enjoy.
  • Tip 3: These taco bowls pair wonderfully with a side of Spanish rice or a fresh garden salad for a complete meal.
  • Tip 4: If you have time, marinate the meat for an hour before cooking to enhance the flavors.
