- In a small bowl, stir together all the ingredients for the Ginger Mayonnaise: mayonnaise, minced fresh ginger, sweet pickle relish, lime juice, and one clove of minced garlic. Make sure everything is well combined to create a creamy, tangy sauce that will enhance your burgers. Once combined, refrigerate this mixture until you’re ready to serve the burgers.
- In a medium-sized bowl, combine the ground chicken, panko crumbs, beaten egg, sliced green onions, chopped cilantro, the second clove of minced garlic, Sriracha sauce, salt, and black pepper. Gently mix everything together, being careful not to overwork the meat. You want to keep the mixture loose and tender for the best texture.
- Once everything is combined, shape the mixture into three equal-sized patties. Make sure they’re slightly larger than the toasted buns, as they will shrink slightly while cooking. Set the patties aside while you prepare the glaze.
- In a small bowl, mix together the teriyaki sauce and brown sugar. This mixture will serve as your glaze, adding that sweet and savory flavor to the burgers.
- Heat the vegetable oil in a nonstick skillet over medium-high heat. Once hot, carefully add the patties to the skillet. Cook the burgers for about four to five minutes on one side until they develop a nice golden brown crust.
- While they cook, brush the tops of the burgers with the teriyaki glaze mixture. This will infuse them with flavor and create a beautiful caramelized surface. After four to five minutes, flip the burgers over, brush the other side with the glaze, and let them cook for another three to four minutes.
- After the second side is cooked, brush the tops again with the glaze and flip them for an additional 30 seconds. This final step ensures that the glaze clings beautifully and intensifies the flavors.
- Once the burgers are cooked through and have reached a nice internal temperature, remove them from the skillet and place them on a plate. Let them rest for a minute to lock in the juices.
- To serve, place each burger on a toasted bun and generously top with fresh baby spinach, cucumber slices, sliced red onion, and a hearty dollop of the Ginger Mayonnaise. Each bite should be a perfect combination of flavors and textures!
Notes
Store any leftovers in an airtight container in the fridge for up to three days. You can easily reheat the burgers on the stove or in the microwave. For a fun twist, try using the leftover meat in a salad for lunch the next day!
