Ingredients
  

  • 1 cup White rice flour
  • 0.5 cup Nut meal ground walnuts or pecans
  • 0.33 cup Corn starch or tapioca starch and other substitutes
  • 0.33 cup Cane sugar
  • 3 oz Dairy-free butter
  • 0.25 tsp Salt
  • 0.25 cup Powdered sugar confectionary sugar
  • 1 Tbsp Water optional – see instructions

Equipment

  • Regular parchment paper
  • Non-stick baking sheet
  • Rolling mat

Method
 

  1. Preheat the oven to 390 Fahrenheit (ca. 199 °C).
  2. Add all ingredients (white rice flour, nut meal, corn starch, cane sugar, dairy-free butter, salt, and vanilla extract) to a food processor and pulse until you get a crumb-like texture.
  3. Take a mixing bowl and add the dough from the food processor. Knead it with your hands for 2 minutes to form a ball. If the dough is too dry, add 1-3 teaspoons of water. One teaspoon at a time.
  4. Take 1 Tablespoon of cookie dough and form a ball with your hands.
  5. Line a baking tray with parchment paper. Place the cookie balls on it, leaving some space between them.
  6. Bake them for 10-12 minutes. Check them after 8 minutes to prevent over-browning.
  7. Leave them on the parchment paper to cool down. While still warm, dust them with powdered sugar.
  8. If completely cooled, roll them in powdered sugar again for a luscious finish.

Notes

  • Parchment paper: I recommend using parchment paper instead of a baking sheet, especially if you bake multiple batches.
  • Place them close: These cookies don’t rise much, so they can be placed relatively close together.
  • When are they ready? If they start to brown on the edges, they are overcooked. Cookies made with rice flour typically stay light-colored.
  • Why double dusting? Dusting with powdered sugar while warm allows it to melt slightly, creating a perfect surface for additional sugar to stick.
