Preheat your oven to 350°F (175°C). Preheating ensures that your chips will bake evenly and crisp up nicely.
Take your whole wheat pitas and cut each one into eight triangles. This is similar to slicing a pizza; the goal is to create even pieces that will cook uniformly.
Spread the pita triangles in a single layer on a non-stick cookie sheet. Make sure to keep them pushed together as much as possible. The less space between them, the crispier they will become!
Now it’s time to drizzle! Take your honey and gently drizzle it over the top of the pita triangles. You want to coat them evenly, but not drown them.
Next, sprinkle the cinnamon generously over the honey-drizzled pita chips. The combination of honey and cinnamon will create a sweet glaze as they bake.
Pop the cookie sheet into your preheated oven and bake for approximately 15 minutes. You’ll want to keep an eye on them to ensure they don’t burn. They should become golden and hard, just like chips!
After baking, allow the chips to cool slightly. They will continue to harden as they cool, creating that perfect chip texture.
If you find they haven’t crisped up enough, simply return them to the oven for a few more minutes. Just be cautious not to overbake them!
